CINNAMON COOKIES RECIPE

 Makes 50-60  depending on size of cookies.

2 1/4 C. All Purpose flour / Plain flour
100 g / 3.5 oz Unsalted butter, at room temperature
1 tsp. Baking soda
1 Egg
1 C. Soft brown sugar
1 tsp. vanilla essence 
1 1/2 tsp. cinnamon powder
1 Egg, lightly beaten
 
Preparation: Preheat oven at 170C / 338F. In a large bowl add sugar, butter and one egg. Mix {using an electric mixer} until creamy {about 2-3 minutes}. Add cinnamon powder,vanilla essence,flour and baking soda plus the lightly beaten egg and make a dough.Adjust dough if necessary by adding a bit more of flour or a bit of water until dough is ready to roll.Knead mixture {on a floured surface} into a smooth dough, until it holds together when shape into a ball.

 Roll out the dough to approximately 4-5 mm thick, then cut out with your favorite shaped cookie cutters. Bake for 10-12 minutes until lightly golden. Take them out of the oven and store them in an airtight container. Enjoy!
