I was having a bowl of granola the other day but I was also thinking about carrot cake at the same time! Yes, thinking about food while having food...oh, 'si gente' yes people, I have those moments (do you have those kind of moments too?! or is it just me?!)... I love food too much and that's my explanation for it. However, that's how the 'Carrot Granola Bread' idea came along and make my day very- very happy! The end. Oh, what a sweet tale, Aldy! Or may be I should have named this blog post; 'The Happy Tale of Aldy and The Carrot Granola Sweet bread'... (ha,ha, ha Ok.enough fooling around :) )  


Now, about this recipe; this bread has the taste of a carrot cake and the addition of the pecans and walnuts make it crunchy + moist but did I mention that you can also add almonds, and other seeds; like sunflowers seeds or pumpkin seeds?! Yes, you can! Feel totally free to add and combine your favorite nuts and seeds to this bread. Now over and out to eat an slice of carrot granola bread.

CARROT GRANOLA SWEET BREAD

1 Loaf
To Make The Bread:

2 C. Shredded Carrots (about 1 1/2 medium carrots)
1 C. Self Raising Flour
1/2 C. Standard Flour (aka all purpose / plain flour)
Pinch of Salt
3 Medium Eggs (I use free range eggs)
1/2 C. Vegetable Oil
1/2 C. Honey or to taste (I use creamed honey)

Adding Some Granola Goodness:

1/3 C. Rolled Oats + 2/3 C. Almond Milk (or regular milk)
Fresh Lemon Zest of 1 medium-size lemon
1/2 tsp. Cinnamon or to taste
1/2 tsp. Nutmeg or to taste
3/4 Pecans, roughly chopped
3/4 Walnuts, roughly chopped
1 Tbsp. Ground Linseed or L.S.A

Preparation:

Preheat oven at 180C/356F. Grease a loaf pan or cake pan and set aside.

*In a bowl add flours and salt Mix well. Set aside.In the meantime cook the oats in almond milk. Set aside. Now add the eggs and oil to the flour bowl and mix well.

*Then add the cooked oats, nuts,linseed, lemon zest, cinnamon and nutmeg.
 And finally add honey and carrots. Mix all ingredients until everything is well combined.

*Pour the mixture in the prepared loaf pan and bake for 40-45 minutes or until a skewer or knife inserted into the center comes out clean. When ready turn into a rack and let it cool completely. Cut into slices and serve with you favorite cup of tea!!!
