Vietnamese Inspired Rolls with Quick Pickled Sauce | Super Vegetarian Roll!


Hi friends, Aldy here! Well, first of all, let me tell you that this blog has been under a lot of changes lately, so mostly I've been submerged into blogging + design for the last couple of weeks. There are still a few things that need to be fixed but I'm getting there, so if you get an error while browsing the site, please just let me know, ok. Now, today I'm sharing with you these ''incredible'' vegetarian rolls because they are so easy to put together and so deliciously flavorful that you couldn't believe it. Really! you can call it super serious fast food! I promise you that once you start making them it becomes almost an everyday habit. And if like vegetarian, quick, food I'm pretty sure you'll love this Vietnamese inspired Sandwich too 😋

The first time I tried this kind of food was while I was living in Australia. I used to go to a bakery close by and just buy myself a vegetarian roll. The ingredients and flavors felt so flavorsome that I could never forget the taste of this sandwich. I mean a sandwich is a sandwich, right?! You wouldn't expect much, but when something so humble is elevated in such an interesting way...well it becomes something else. Don't you think so too?! And so, revisiting some memories the other day and while going through some old photographs this Vietnamese Sandwich popped-up into my head like something I missed deeply but that I somehow forgot. 

I started gathering ingredients chopping and shredding vegetables while trying to remember its taste. It was fresh, fulfilling, and incredibly delightful but this sandwich didn't have any pickles or anything like that it just came with a spread of mayonnaise. And that time it was just great to me. But from where I come from the addition to some kind of pickled sauce to a sandwich it is almost mandatory so I made a quick pickled sauce to go with it. And it just goes perfectly well with this!


But you can always skip the pickled sauce and just any sauce of your choice. Have it for lunch, bring it to work (just pack + go + save too!), serve it by itself or with a bowl of soup, and if you want to add some protein you can also add slices of chicken, beef or pork. I like mine with just vegetables but J. likes adding chicken to it.

VIETNAMESE  INSPIRED SANDWICH with QUICK PICKLED SAUCE

To Make the Rolls:

1 sourdough baguette bread, cut into half
1 Carrot, shredded
Fresh Cilantro / Coriander, about a handful (or as much as you like)
1 -2 Radishes, cut into slices
Half of one cucumber, cut into slices
A few slices of small red chilli (optional)
Mayonnaise to taste

Preparation:

Spread some mayonnaise over half of each roll. Then add radish, cucumber, carrot, and coriander. Add pickled sauce over the top of each roll and serve!

 To Make the Pickled Sauce:

A quarter of one green apple, cut into small cubes
A quarter of one red onion, cut into small cubes
2-3 Tbsp. White vinegar, or to taste
Sea Salt to taste
2-3 Tbsp. Fresh lemon juice, or to taste
1 Tbsp. Coconut Sugar

Preparation:
In a small bowl, add all ingredients and mix until everything is well combined. Refrigerate until ready to use. Enjoy!!!
