Garlicky Brown Lentils Salad with Green Peas + Parsley /////

Rainy days.

Sometimes I forget how delicious and beautiful lentils are.

Like the brown lentils salad I grew up with. This is a dish that I always keep close to my heart.

So after a morning walk at the park, I headed to our favorite bulk shop to stock up our food cabinet, coming home with brown lentils, polenta, rice, flour and spices. It was raining and the scent of rain on dry earth was calling me for a good plate of lentils! As soon as I finished unpacking my goodies I put some music on {some lovely tunes from the 80’s} and I started cooking. I could hardly wait for this salad to be ready! The smell of chopped garlic and parsley made every minute irresistible!

Brown lentil salad with green peas lots of parsley, and garlic finely chopped, a good drizzle of olive oil, sea salt and pepper. A comforting salad that tastes simply delightful from start to finish!

I love making different types of combination with lentils and this garlic and parsley lentils salad is one of many variation. I also love  combining brown lentils with crispy bacon, grated parmesan cheese, garlic and diced tomatoes with lots of fresh parsley.

Try any of this combinations with brown lentils and I’m sure you’d like it! Brown lentils are absolutely delectable. They can be eaten at almost any time of the year and it would be a mistake not to mention the several nutritional benefits they have!

  4. Aldy, my favorites are red lentils, they make a very creamy soup and don't even need any cream. I've never had brown lentils but with this recipe I'm sure I will try them soon. The recipe sounds delicious and the picture of the finished salad makes it irresistible!
    Take care.
