Sometimes I forget how delicious and beautiful lentils are. Like the brown lentils salad I grew up with. This is a dish that I always keep close to my heart. So just a few days ago I headed to my favorite bulk shop to stock up our food cabinet and the first thing I bought...brown lentils! It was raining and the scent of rain on dry earth was calling me for a good plate of lentils. Brown lentil salad with green peas lots of parsley, and fresh garlic! A comforting salad that tastes simply delightful from start to finish!

I love making different types of combination with lentils and this garlic and parsley lentils salad is one of many variation. You can also add other ingredients and try different combinations with brown lentils such as; lentils + crispy bacon + grated parmesan cheese or lentils + garlic and diced tomatoes with lots of fresh parsley.

Try any of this combinations with brown lentils and I’m sure you’d like it! Brown lentils are absolutely delectable. They can be eaten at almost any time of the year and it would be a mistake not to mention the several nutritional benefits they have!

GARLICKY BROWN LENTILS SALAD with

GREEN PEAS AND PARSLEY


Serves 2-3

1 1/2 C. Brown Lentils
5 C. Water
4 Garlic cloves, finely chopped
1 C. Cooked Peas
Parsley leaves, chopped,as much as you like.
Olive oil to drizzle
Sea Salt to taste
Pepper to taste, optional

Preparation:
Rinse lentils in cold water. In a sauce pan add water and lentils and bring to boil. Then simmer for 40-45 minutes. Strain the lentils add peas, olive oil, garlic, parsley and salt. Serve with toasted french bread.
