Here is a quick recipe that you can enjoy as a nice and delicious snack or as an elegant and inexpensive appetizer. I named it; Roasted Tomatoes with Herb Fluffy Parmesan Egg.

Roasted Tomatoes with Herb Fluffy Parmesan Egg 

2 Medium Round Tomatoes
Olive oil
Salt to taste
2 Tbsp. Parmesan cheese, grated
1 Egg, beaten
1 tsp. Oregano (fresh or dry)—or any herb of your choice.


Preparation:

Preheat oven to 200°C/ 400 F.

Cut tomatoes in half and using a teaspoon, scoop out the inside flesh of the tomato. Place them on a tray. Season with a little bit of olive oil and salt. Combine egg, parmesan cheese and oregano.

Pour egg mixture evenly over the tomatoes. Season lightly with a bit more of salt—if needed. Bake for 7-10 minutes until egg mixture is raised and the tomatoes look soft.
