Inspiration Breakfast: Coconut & Seeds Granola Recipe ( + New Video )


Hi friends! I'm just coming in quickly today to share with you some "Granola Breakfast Inspiration" + a New Video with a new Granola Recipe! It's been a while since my last video, right?! But hopefully, we can create more videos soon. Oh, by the way, in this video you'll see little Lia helping around, adding and mixing ingredients as well (which by the way has become one of her favorite activities lately).

This new granola recipe is completely nut-free and is incredibly delicious but I also put together some granola recipes with nuts from the archives. So you'll have a few granola recipes to choose from plus a chocolate cereal recipe too. Granola is perfect for breakfast, afternoon snack, or as a healthy dessert after a light meal. You can even take some of this granola to go in a container with some plant-based milk or top up your smoothies with it! 

I like to have some granola in the afternoon as a snack, as my afternoon treat, while J. prefers having granola for breakfast since he enjoys that sweet boost of energy in the morning.

COCONUT + SEEDS GRANOLA RECIPE
Nut-free & Refined Sugar-Free

2 C. Oats (but you can always double quantities if want some more)
3/4 C. Sunflower Seeds
3/4 C. Pumpkin Seeds
Sunflower oil (about 1 cup.)
3/4 C. Raisins
1 C. Coconut Flakes
Pinch of Salt, optional
1/2 tsp. Cinnamon powder, optional
Organic Maple Syrup or Organic Rice Syrup, to taste
Coconut Sugar or Organic Cane Sugar, to taste 

Preparation:
Preheat oven to 150C/ 300F.
In a bowl add oats and seeds, mix well. Add salt and cinnamon. Then add sunflower oil, maple syrup, and coconut sugar. Mix all ingredients until everything is well combined and coated. 

Place granola mixture on a big baking tray and spread evenly, Bake for 15 minutes, stirring every 5 minutes until crispy and golden. Remove from the oven and add the coconut flakes and raisins. Mix and it's ready! Let it cool and transfer to a glass jar or airtight container. And store it in a cool, dry place. This granola will keep good and delicious for up to 3 weeks.
