I can’t wait for the weekend to begin. I know the week have just started but to me this past weekend flew by very quickly. I have been busy lately, between my job, home and unexpected little things here and there. So I’m really looking forward to a relaxing upcoming weekend

But despite all that, I did have some fun though…we watched a movie (actually it was the second time J. and I watched it) This movie is called HOME, and it has a wonderful message about our Planet, species, us, and the dramatic changes (already happening) and how all this is affecting the natural resources, including mineral and energy resources. It is a fascinated film full of breath-taking nature photography by a very talented French photographer -Yann Arthus-Bertrand. Images and colors are behond beautiful, believe me! However, let go to the recipe! This is a bittersweet focaccia (I wanted to have something to eat + enjoy during our 'homemade-date-movie-night', so I made this, kind of a quick appetizer).I mainly used what I had on hand but you can adjust ingredients to your liking. Oh! FEATURE of THIS RECIPE: The dough for this focaccia is easy and super-versatile, SO it can also be use as pizza dough.

Let me tell you that is nothing better that wrapped yourself in a soft warm and snuggle into the couch, watch a movie + enjoy the taste of this bittersweet focaccia!

EASY BITTERSWEET FOCACCIA RECIPE

 

Apricot + Onion + Walnuts + Cheese
 
makes 1


Dough:

2 C. Unbleached All Purpose Flour / Plain Flour

3/4 C. Warm water

1/4 tsp. Salt

1 tsp. Dry yeast

1 tsp. Sugar

1 tsp. Olive oil

Bittersweet Topping:

1/2 Red onion, finely sliced

1/4 C. Dried apricot, sliced

1/4 C. Walnut, chopped

1/4 C. Blue Cheese

1/4 C. Parmesan Cheese

Fresh Basil, leaves

Olive oil + Garlic Salt to taste




Preparation:
Preheat oven at 200 C/ 400 F. In a medium bowl combine flour and salt-mix. Take a small bowl. Add yeast, warm water, sugar, and olive oil--Mix well and cover with a plate.Wait (about 10 minutes) for bubbles to appear in the yeast. Once the bubbles have appeared, and using a wooden spoon start to mix together the ingredients to form the dough. 

Then using your hands work the dough for about 5 minutes until dough is smooth and elastic. Cover and set in warm part of the kitchen-let the dough rest for 20 minutes. When ready, just punch down the dough over a floured surface and shape into a rectangle. Transfer the dough into lightly greased baking tray. Brush the dough with olive oil and sprinkle with garlic salt, Parmesan cheese, onions, apricots, walnuts, blue cheese and basil. Bake for 15 minutes and serve immediately.
