 Radish Green Leaves Salad with Basil Vinaigrette

1Bunch of fresh radishes, clean and cut into thin slices
Radishes Leaves, washed.--By soaking the green leaves in water.
2 Medium potatoes, boiled and diced
Basil Vinaigrette * recipe below

Preparation:
In a plate or serving dish place radish green leaves, potatoes and radish slices. And spoon the vinaigrette over the salad.


Basil Vinaigrette 
1/3 C. olive oil
1 Tbsp. balsamic vinegar
1 clove of garlic
1 Tbsp. fresh basil
Salt and Pepper to taste


Preparation:
Place all the ingredients in a blender and blend until smooth. Refrigerate until ready to use. Serve the salad with slices of fresh bread.

Hi Aldy! Thanks for your kind comments at The Spice Garden! We have tried to grow radishes many times over the years, but there is a worm in the New England soil that loves to get to them before we can ... and since we try to garden organically, we've never figured out a way to have fresh radishes from the garden. So... I must buy them when they are perfect and fresh ... usually at Farmer's Market ... we have them in salads, but I'd love to know of other ways to fix and eat them!
