Living in different countries has shown me beautiful holiday traditions. Some of them were very unfamiliar to me. And Thanksgiving was one of them. One of the most inspiring and beautiful celebrations besides Christmas--That I enjoyed since the first moment I knew it existence.
For many years, I've celebrated Thanksgiving day--It always brings memorable thoughts about family and friends. And nowadays ... living in a country that does not celebrate this wonderful festive holiday-- It became the tradition that I missed the most.
And that I've learned to love and to understand.

I remember the pleasant feeling of having such a colorful and delectable dinner. And the love of our dearest people.

Lovely tablecloths,Thanksgiving table decorations and irresistible aromas filled our house and hearts with joy and gratitude.Those aromas...
Turkey, cranberries, candied yams, stuffing, mashed potatoes, pumpkin pie. Yes, lots of foods, lots of herbs and spices and lots of laughter!
Yes, the inspiration to make this dessert came from joyful memories...
Ohhhh...The warmth of spices. Cinnamon, nutmeg, ginger, cloves…they all reminds me of pumpkin pie--my favorite Thanksgiving treat.
I added chocolate chips to the cheesecake mixture and it really works wonders!

And so it is time to say 'Happy Thanksgiving' to all of those who will be celebrating Thanksgiving Day this upcoming Thursday!
And for those of you who do not know about Thanksgiving … This could be a great opportunity to simply be thankful for anything and everything!
Spiced Chocolate Cheesecake with Caramel Decorations
Makes 2-3 mini-cheesecakes (depending ring size)
6 chocolate biscuits (I use Oreo cookies)
20 g unsalted butter, at room temperature
150 g / 5 Oz. cream cheese
2 Tbsp. vanilla essence
2 Tbsp. Caster sugar
1 tsp. cinnamon powder
½ tsp. ground nutmeg
½ tsp. ginger powder
Chocolate chips
* You can also use all-spice instead
Preparation:
In a medium bowl crush biscuits and mix with the butter. Take two 7 cm metal rings and place them on the serving plates. And add cookie mixture to form the base of the cheesecake.
In a separate bowl mix the cream cheese, the vanilla essence, sugar and spices and chocolate chips. Mix well and fill the rings with the cream cheese mixture. Carefully lift the rings off. Place in the fridge until ready to serve.
Garnish each cheesecake with caramel decorations and a little piece of cinnamon stick.

Place the sugar in a non-stick pan on a medium-high heat. Do Not Stir. And when sugar starts to turn into a caramel, just tilt the pan to mix the sugar. When all the sugar is dissolved or until melted and golden remove pan from the heat. Gently pour caramel on a well-oiled tray. Allow to cool and harden. Break into shards or squares to serve
