Coconut Macaroons // Gluten Free and Lactose / Milk Free //

This is a recipe that I really enjoy making. I just love the coconut, and I'd eat these delicious little treats every day if I could! Really! This is a very simple recipe and they are 'gluten free' + 'lactose / milk free' also. So everyone can enjoy these! Tthey are light, low in fat, fluffy and absolutely rich in coconut flavor. 





COCONUT MACAROONS RECIPE

makes 18-23 

1 2/3 C. Fine unsweetened shredded coconut
3 Egg yolks
3 Egg whites
1/4 C. Honey (or any sweetener of your choice)
1 tsp vanilla essence

 
Preparation:
Preheat oven to slow. Beat egg yolks, sugar and vanilla essence into a medium bowl until creamy. Now, stir in coconut. Set aside. With an electric mixer, beat the egg whites in a small bowl until firm peaks form. Stir gently into coconut mixture. Drop heaped teaspoons of the mixture onto greased oven tray. Bake in slow oven for about 10 minutes. Reduce heat to very slow, bake further 20 more minutes or until macaroons are golden brown. When ready, place on a rack to cool.
